3 Healthy Breakfast Recipes With Matcha

1.   Matcha Chia Pudding:

You can make this matcha chia pudding the night before, so it’s easy to grab from the fridge before you head into work. It requires zero cooking skills, as you only need to stir everything together…and voila! Leave overnight and you can reap all the health benefits the following day!

Ingredients:

For the toppings (optional):

  • Serves 2 people
  • For the chia layer:
  • ½ cup chia seeds
  • 1 ½ cup milk of your choice (e.g. almond, cashew, coconut)
  • 1 tbsp maple syrup or raw honey
  • ½  tsp vanilla extract
  • 2 tsp matcha
  • 1 pinch of salt
  • A handful of seasonal fruits, e.g. banana, blueberries, raspberries
  • 1 tbsp cacao nibs
  • 2 tbsp granola, seeds, nuts.
  • A handful of coconut shavings.

Instructions:

  1. In a bowl, stir the chia seeds with the almond or cashew milk.
  2. Add the maple syrup or honey.
  3. In a separate bowl, mix the matcha powder with a little hot water until dissolved.
  4. Add to the chia seed milk mix.
  5. Add the vanilla extract, and stir well.
  6. Place the bowl in the fridge and sit overnight.
  7. In the morning, take out from the fridge in the morning, add your preferred toppings and enjoy!

2. Matcha Pancakes with Strawberries & Pistachios

 

Who doesn’t like Brunch? And when you can make these delicious matcha pancakes there is no better way to start your weekend! Really! Tell us otherwise. 

 

Ingredients for 16 pancakes.

  • 1 ½ tsp matcha powder
  • 2 eggs
  • 1 ¾ cup milk
  • 1 tsp vanilla essence
  • 2 cups self-raising flour
  • ⅓ cup caster sugar
  • Coconut oil for frying to serve
  • 3 tbsp maple syrup
  • A handful of strawberries, sliced, chopped pistachios

 

Instructions:

  1. make the pancake mix.
  2. whisk the eggs with the milk and vanilla essence in a jug.
  3. In a separate large bowl, sift the flour and matcha.
  4. Stir in the sugar.
  5. Make a well in the center, pour in the egg, milk, and vanilla mix. 
  6. Whisk until just combined, You can leave the batter on the side (covered) until you’re ready to cook your pancakes.
  7. Heat a large non-stick frying pan over medium heat. 8.Grease the pan with butter or coconut oil.
  8. Pour ¼ cup of pancake batter for each pancake into the pan. You should be able to cook 2 pancakes at a time.
  9. Cook the pancakes for 2 minutes on one side, or until bubbles appear on the surface.
  10. Flip and cook for a further 1-2 minutes to cook through.
  11. Transfer each pancake to a warm plate. 
  12. Cover loosely with foil to keep warm.
  13. Repeat with the remaining mixture, greasing the pan with more butter or oil between batches.
  14. Stack in a tall tower with some sliced strawberries and chopped pistachios amongst the pancakes.

                                     Drizzle the maple syrup all over, and enjoy!

 

3. Matcha Latte

Ingrédients

  • 1/2 teaspoons matcha powder
  • 1 tablespoon hot water
  • 2 teaspoons honey, or to taste
  • 3/4 cup hot milk

 

Instructions:

  1. Spoon the matcha green tea powder and the sugar into a mug or cup.
  2. Add the warm water and mix with a spoon or with a whisk until it is a smooth dark green paste to ensure no lumps form.
  3. Warm the milk in a small saucepan and pour into the mug until nearly full. Use cold milk for an iced latte.
  4. Use a whisk to mix the paste and milk until smooth and light green.
